it's mexican night in the hines' household!
this meal was a bit time consuming, but i started a day in advance to make it a bit easier, and the only things that were homemade was the chips and salsa (:
so for those recipes, you'll need:
3/4 -- 1 cup roma tomatoes
1/3 cup red, green, and yellow bell peppers -- roasted, see ** below
1/4 cup cilantro (i grow my own, it's SO FRESH!)
1 clove garlic
1/4 cup purple onion
tbsp lemon juice from a fresh lemon
1 ear of corn, roasted (i did mine in the oven, wrapped in foil with a tbsp of butter and **chopped bell peppers**, (which is what i added to the salsa)
1. chop all ingredients and put into food processor, don't over blend.
2. add lemon juice and stir!
i really didn't follow a recipe for the salsa, i just "eye-balled" it and it turned out great! and what i love about NOT following recipes to a "t" is the ability to make something i'm cooking truly mine, and it turned out delicioso!
NOW, FOR THE CHIPS
these were really tasty and super easy to make, all you need is olive oil and tortillas. i used the low-card, 100 calorie kind, and i ALWAYS use "EVOO." (extra-virgin olive oil).
1. stack the tortillas on top of each other and use a pizza cutter to slice into chip-shape (:
2. place on well greased baking sheet and bake at 350 degrees for about seven minutes, or until golden-brown.
3. remove and let sit and cool completely, or they won't get crunchy!
how easy was that?!
now for the rest of the meal i just fried some ground turkey, warmed some canned black beans, and steamed up some wild rice. serve with the 100 calorie tortillas and you're ALL SET!
